Brush black/chilli pudding with melted butter and grill on both sides
Sprinkle slices of apple with caster sugar and caramalise under the salamander
Assemble the gateaux by layering in the following order;
Black/chilli pudding-apple-cheese,black/chilli pudding-apple-cheese
Add as many layers as desired and keep warm in oven
Cut bacon into lean julienne and gently saute in a little butter, add the chopped onion and cook to a little colour. Add a little diced apple, the cream and mustard and reduce to thicken slightly
Add cheese to melt
To present; Place gateaux in centre of plate, finish with the sauce around the gateaux

3 thin slices of apple
25g apple
Splash of cider
A little chicken stock
A little chopped onion
1 rasher of bacon
50g grated Lancashire cheese
teaspoon of English mustard
125ml cream
caster sugar
50 gm butter
