Black/Chilli Pudding Patties with Red Onion Marmalade

Cook the potatoes in boiling water until soft, drain & mash.
Mix in the skinned black pudding/chilli pudding, spring onion, egg yolk & mustard to your taste.
Divide into 4 equal pieces & shape into patties
Sprinkle the flour on a plate & dip the patties until coated on all sides.
Heat the oil in a frying pan & lightly fry the patties on each side until golden.
Serve hot with the marmalade.
