Cut the orange in half and squeeze out the juice into a container
Gently heat the marmalade in a pan and add the orange juice
Heat the olive oil and fry the bacon with the black pudding until the bacon is crispy.
Place the Rocket on each plate and add some sliced potatoes
Add the black pudding mixture on top of each salad.
Drizzle some hot marmalade mixture over the top
Serve as a starter.

6 rashers smoked bacon - sliced
1 large orange
1 Bury black pudding - sliced
8 new potatoes – cooked and sliced
