Black Pudding with Shrimps in Garlic Butter

Ingredients

Serves 2

  • 1 Black Pudding
  • 1 Pack of shrimps (or prawns)
  • 2 cloves garlic finely chopped
  • Knob of butter
  • 1 pack baby watercress/ rocket salad
  • Baby new potatoes (and knob of butter for serving)
  • Balsamic vinegar

How to Cook

Method

Step 1

Put potatoes on to boil.

Step 2

Gently simmer Black Pudding.

Step 3

Chop garlic finely and cook gently in butter.

Step 4

Lay out plates with salad.

Step 5

Dress with balsamic.

Step 6

Peel skin off pudding and slice through centre to make two ‘half circles’.

Step 7

Place puddings on salad and cover with garlic shrimps / prawns (and garlic butter).

Step 8

Serve with new potatoes and butter
