Ingredients

  • 2 thick slices of seeded wholegrain sourdough or multigrain bread
  • 2 slices of Bury Black Pudding
  • 1 large free-range egg
  • ½ ripe avocado
  • Handful of fresh rocket
  • 1 tsp butter (optional, for the bread)
  • 1 tsp olive oil
  • Salt
  • Freshly cracked black pepper

Black pudding is a very versatile ingredient and can be cooked in a variety of different ways.

Method

1. Toast the bread

Toast the bread until golden and crisp on the outside but still soft in the middle. Lightly butter if desired.

2. Cook the black pudding

Heat a frying pan over medium heat.

Cook the black pudding for about 3–4 minutes per side until crisp around the edges and heated through.

Transfer to a warm plate.

3. Fry the egg

Reduce the heat slightly.

Add a little olive oil.

Crack in the egg and cook sunny side up for about 2½–3 minutes, leaving the yolk runny.

Season with salt and pepper.

4. Prepare the avocado

Slice the avocado and season lightly with salt and pepper.

Assemble

On the bottom slice of bread:

  1. Layer the rocket.
  2. Add the avocado slices.
  3. Place the two slices of black pudding on top.
  4. Carefully add the fried egg.
  5. Finish with the second slice of toasted bread.

Serve immediately while the yolk is still runny.
